Sfiha Flatbread With Ground Beef
Ingredients for filling
½ lb ground beef
½ onion, chopped
½ cup parsley (and extra for garnish)
½ cup pine nuts
1 tbsp yogurt
Salt
Black pepper
Allspice
Ground nutmeg
Ingredients for dough
1 tbsp sugar
1 tbsp dry yeast
1 cup warm water
2 ½ cups of flour
2 tbsp olive oil
1 tbsp salt
Step-by-Step Instructions
In a mixing bowl, combine the ground beef, chopped onion, parsley, pine nuts, yogurt and spices. Mix by hand and set aside.
In a separate bowl, combine 1 cup flour, 1 tbsp sugar, 1 tbsp yeast and 1 cup warm water for the dough. Whisk together and allow to sit for 10 minutes.
Preheat the oven to 475°F / 237°C
Once bubbles appear in the dough, add an additional 1 ½ cups of flour, 2 tbsp olive oil, and 1 tbsp salt.
Knead by hand for a few minutes and place the dough on a floured surface. Roll out the dough and cut it into small circular flatbreads.
Place the flatbreads on a baking tray lined with baking paper. Create small divots in the dough with your fingertips, then brush with olive oil.
Top the flatbreads with the meat mixture and bake for about 8 minutes at 475°F / 237°C.
When they're ready, remove from the oven and garnish with parsley.
